Yield: 2 servings

Per serving: 1 Lean, 3 Green, 3 Condiments

Total Time: 30 minutes

Ingredients

2½ cups diced eggplant (about ¾-inch cubes)

½ cup chopped tomatoes

1 tsp dried oregano

¼ tsp kosher salt

⅛ tsp ground black pepper

1⅓ cup part-skim ricotta

2 eggs

3 tbsp grated parmesan

Directions

  1. Preheat oven to 450°F.
  2. In a medium nonstick sauté pan, sauté the eggplant until soft and light golden brown. Add the tomatoes, oregano, salt, and pepper.
  3. Reduce the heat to medium-low and cook for about 1 to 2 minutes.
  4. Divide the eggplant and tomato mixture between 2 (7-inch or ½ quart) non-stick baking dishes.
  5. Combine the ricotta, egg, and parmesan in a medium-sized mixing bowl.
  6. Top the eggplant dishes evenly with the ricotta mixture.
  7. Bake on the top rack of oven until bubbly and golden brown, about 15 to 20 minutes.

Breaking Generational Cycles

McKenzie always felt a profound calling to assist others, aiding them through their traumas, bolstering their self-esteem, and guiding them through negative cognitions. Her belief in people's resilience was not just theoretical. As a trauma therapist, she had witnessed firsthand the human ability to overcome struggles and thrive. McKenzie held a deep-seated desire to help, a passion which led her to add the role of an independent OPTAVIA Coach to her repertoire. Little did she know the profound impact it would have on her life.

In a short span, McKenzie shed over 40 pounds*. Yet, what she had gained surpassed mere physical transformation; she now embodied her true self, authentically, as a wife, a mother, and a professional.

As a therapist, McKenzie comprehended the significance of both internal and external health. Prior to embarking on her health journey, she believed herself to be healthy internally. However, the need to lose weight for her own external health and future persisted. Past attempts at various programs left her feeling that something crucial was always lacking—either her mindset wasn't addressed, or the support didn't meet her needs. McKenzie found herself caught in cycles of brief success followed by abruptly quitting, leading to a deep sense of shame and guilt that left her feeling like a failure. To cope, she resorted to self-soothing mechanisms like food and alcohol, a roller-coaster cycle she desperately wanted to break.

Reflecting deeply on her choices, McKenzie traced her coping mechanisms back to her childhood experiences. Her hard-working mother emphasized helping others but struggled to prioritize self-care or model healthy habits due to an upbringing of adversity and Midwestern comfort foods. Her father, grappling with substance abuse and mental illness, further contributed to the dynamics shaping her habits and beliefs. McKenzie understood the generational impacts of trauma.

 Yet, McKenzie was determined to break this cycle for her own family, especially her 2-year-old daughter. She recognized the danger of perpetuating these patterns and the burden it might place on her child. OPTAVIA's Habits of Health system became the tool that allowed McKenzie to halt this cycle, enabling her to set goals from a new place of empowerment rather than quitting due to exhaustion.

Her transformation extended beyond weight loss; it encompassed a newfound energy, confidence, and a set of self-care skills she now possessed. McKenzie's passion for life reignited, fueling her desire to help others and embrace new experiences. Her changed outlook and habits were not just for herself but for the generations to follow. She’s since positioned herself within a cycle of self-love, care, and vitality that she’s determined to continue.
