Green vegetables are known for their optimal nutrients and vitamins to help keep us healthy. Packed with Vitamin K and folate, their benefits are linked to weight management and healthy brain function. However, when most people think of green vegetables, they automatically think “salad”.

There are actually many other options for adding more green vegetables to your diet. Here are some creative ways to incorporate more greens aside from a salad:

  • Breakfast. If you’re having your lean and green meal in the morning, add chopped greens to your scrambled eggs or omelet.
  • Kale chips. After washing your kale, simply remove the stems and cut the leaves into bite size pieces. After coating lightly in a healthy oil, bake until the edges have begun to brown, approximately 10 – 15 minutes, and you’ll have your serving of vegetables in a light, crunchy snack. Your healthy snack can also go towards your next Lean & Green meal!
  • Lettuce wraps. Put a healthy spin on your taco by spooning your lean protein and healthy condiments into a romaine or butter lettuce leaf.
  • Pesto. Pesto is traditionally made with basil, but kale and spinach are excellent substitutes and an easy way to get an extra serving of greens in your meal.
  • Garnish. Finely shred your greens and sprinkle them as a garnish on your dish. A tasty combination includes broccoli, watercress, and parsley.
  • Zoodles. Substitute your pasta for zucchini noodles, or zoodles! These noodles are made by using a spiralizer or peeler to cut the zucchini into thin strips. Many grocery stores also have frozen zoodles! Add in your healthy protein and condiments and you’ll have a delicious pasta alternative in no time.

As you can see, not loving a traditional salad doesn’t mean you need to sacrifice your vegetables. You can still nourish your body with plenty of greens. Alternatively, if you love salad, you can still try something new and mix up your mealtime routine.

Yield: 4 servings

Complete Lean & Green Meal: 1 leaner, 1 Healthy Fat, 3 Green, 3 Condiments

Total Time: 30 minutes

Ingredients

6 tbsp almond flour

8 tsp large flake nutritional yeast

¼ tsp each or less: salt & pepper

1 lb. eggplant, cut into 8 rounds about ½- inch thick

Cooking spray

1 can of diced tomatoes

2 cloves garlic, minced

2 scallions, trimmed and chopped

¼ cup chopped fresh basil

1½ lbs. pre-grilled chicken breast, sliced

Directions

  1. Preheat oven to 400⁰F.
  2. Combine almond flour, nutritional yeast, salt and pepper in medium bowl.
  3. Rinse eggplant slices, and coat both sides with almond flour mixture. Place eggplant slices on a lightly greased baking sheet. Bake for 20 minutes, flipping halfway through.
  4. Meanwhile, combine the tomatoes, garlic, and scallions in a saucepan, and simmer on low for 15 to 20 minutes.
  5. Once eggplant is cooked, remove from oven and serve with tomato sauce and grilled chicken.

Tip: You can buy fresh or frozen pre-grilled chicken breast strips at the grocery store to save time.

Per serving: 350 calories, 10g fat, 17g carbohydrate, 47g protein

A Gift from an Angel

“There are many addictions in the world and mine was definitely food. My relationship with food brought me to 256 pounds. Having had a heart attack and double bypass at the age of 41, I knew I should lose the weight.”

Fast forward to 2016 at 290 pounds, Ann was in despair as she watched her son Brian in a hospital bed awaiting a liver and kidney transplant.

“He told me, ‘Mom, when I get my transplant and am well, I would love to go back to Hawaii with you and Dad, but you need to take care of you. You know you need to lose weight to stay healthy and be happy again.’ We made a pact that day to do so.”

Sadly, Brian passed away two weeks prior to his transplant date. On the first anniversary of his death, Ann chose to honor the pact she had made with her son.

“I had been researching OPTAVIA and saw some of my family members doing so well on the Plan. It piqued my curiosity.”

In April 2017, Ann received her kit and lost 80 pounds within nine months*, and she was no longer addicted to food.

“My whole life has totally changed. I am alert, energized and can climb steps without using railings. Now I can play on the floor with my grandkids and get back up without assistance. I was brought to tears when I could use the seat belt without an extension and had 12 inches left over. That was amazing.”

Ann no longer lives to eat, but now eats to live and she thanks her son for helping her understand that she needed to make a change.

“He is my angel and will always be with me. He is seeing me smile for real now. The world is seeing a person who is real and comfortable in her skin.”

Ann’s health journey is ongoing, however her work in progress gives her confidence that she will reach her goal of losing an additional 60 pounds.

“A healthy life is more than the number on the scale. It is happiness in all ways—physical, mental and financial. And it begins with one Healthy Habit at a time.”

Ann chose to pay her success forward by becoming an OPTAVIA Coach, helping over 25 clients and treasuring every minute.

“What I receive as a Coach goes far beyond what words can express. It truly is healing my soul to help others look for the solution it took me over 35 years to find.”

Ann and her husband will be going to Hawaii in four years to celebrate their 50th wedding anniversary and she is confident that Brian will be with them every step of the way.
