Per Serving: 1 Leaner, 3 Green, 3 Condiments, 1 Healthy Fat

Total Time: 60 minutes

Ingredients

18 oz. boneless skinless chicken breasts, sliced into strips

4½ tbsp reduced-fat margarine, divided

6 tbsp Louisiana hot sauce, divided

12 oz. 99% lean ground turkey

½ cup + 2 tbsp reduced-fat blue cheese crumbles, divided

1 clove garlic, minced

2 cups cauliflower florets 

1½ tbsp almond flour

Cooking Spray

¾ cup 2% Greek yogurt

1 tbsp light sour cream

1 tsp cider vinegar

4 cups romaine lettuce, chopped

1 cup celery, sliced into ½-inch pieces

1 cup cherry tomatoes, halved

Directions

To make the buffalo chicken strips:

  1. Heat 1½ tablespoons of margarine in a small skillet over medium-high heat.
  2. Sauté chicken until lightly browned, about 5 to 7 minutes.
  3. Remove the skillet from the heat and pour in 2 tablespoons of hot sauce. Toss to coat the chicken well, and transfer to a separate plate to keep warm. Set the skillet aside for later use.

To make the buffalo turkey meatballs:

  1. Preheat oven to 400ᵒF.
  2. In a mixing bowl, combine the turkey, ¼ cup of blue cheese, and garlic and stir with a fork until mixed.
  3. Form mixture into 16 meatballs.
  4. Place meatballs on a non-stick baking sheet and bake for about 15 to 17 minutes until cooked through.
  5. In the same skillet used to prepare the chicken strips, combine 1½ tablespoons of margarine and 2 tablespoons of hot sauce. Cook over low heat until melted.
  6. When meatballs are done, transfer to the skillet and toss to coat in margarine and hot sauce mixture.
  7. Transfer meatballs to a separate plate; keep warm and save the skillet for later use.

To make thebuffalo cauliflower bites:

  1. Place the cauliflower florets in a large bowl.
  2. In the same skillet used to prep the cooked meatballs, melt 1½ tablespoons of margarine and 2 tablespoons of hot sauce over low heat.
  3. Pour hot sauce mixture over the cauliflower and toss to coat.
  4. Sprinkle cauliflower with almond flour and toss to coat.
  5. Set the air fryer to 350ᵒF, and spray the basket with cooking spray.
  6. Place the cauliflower in the basket, and spray again with cooking spray.
  7. Air fry for 12 to 15 minutes, tossing halfway through, until the cauliflower is golden brown and cooked through, but not mushy.

To make the blue cheese dressing:

  1. While the cauliflower bites are cooking, make the blue cheese dressing by whisking together the yogurt, sour cream, and cider vinegar in a small bowl. Stir in ¼ cup of blue cheese and refrigerate until ready to serve.

To serve:

  1. Spread the romaine across a large serving platter. Scatter with celery and cherry tomato halves. Sprinkle with remaining 2 tablespoons blue cheese crumbles.
  2. Arrange chicken strips, meatballs, and cauliflower bites over romaine, and serve blue cheese dressing on the side.
  3. Per serving, place 1 cup lettuce on a plate and top with ¼ cup sliced celery and ¼ cup halved tomatoes. Arrange 6 ounces chicken strips, 4 meatballs, and a ½ cup cauliflower bites on top. Drizzle with 3 tablespoons of blue cheese dressing and garnish with a ½ tablespoon blue cheese crumbles.

Expanded Shells

Darkness seemed to envelop Jacquole's life. Each day was a struggle, drained of energy, waking up tired and exhausted, running on fumes just to make it through. Yet, in her despair, a divine plan unfolded.

"One day, after enduring the pain of body-shaming, I stumbled upon a transformative post on Instagram. It was a post by my Coach, Jamala, showcasing a journey of change. Memories of an opportunity presented three years prior resurfaced, but at that time, I hesitated due to a scarcity mindset. However, in the tumultuous year of 2020, at my lowest point, I decided to take a chance on my well-being," Jacquole reflects.

Fear of failure lingered, and doubts echoed in her mind. A friend questioned what would be different this time, and Jacquole honestly admitted she didn't know. Despite the uncertainty, she took the leap, driven by a desperate desire for change. "I knew I didn't want to stay where I was physically, mentally, and emotionally, and I was so desperate for a change. I was sick and tired of seeing the scale increase every time I stepped on it," she confesses.

Sending a message to her Coach became the turning point. Sitting on the floor of her closet, surrounded by clothes that no longer fit, Jacquole made the commitment on her birthday, October 11th, 2020. The journey commenced, leading to a total weight loss of 30 pounds* in the first 3.5-4 months.

Yet, the transformation extended beyond mere weight loss. The weight was the initial allure, but Jacquole found herself rewriting her entire life story. A decade vanished as she embraced a renewed sense of well-being. "I feel better than I did 10 years ago!" she exclaims.

With newfound strength, Jacquole became a Coach just a month into the program. It was a decision she hailed as one of the best in her life. "I became a Coach after a month of being on the Program, and it's one of the best decisions I've ever made! I know I'm successful because I'm helping others achieve their goals," she proudly declared. Success for her was not just personal achievements but in helping others reach their goals.

Recently, she and her husband hosted a community event where they painted nautilus shells—a symbol of their health journey, starting small at the center and building habits, much like the expanding shell. "Now we all have a beautiful reminder of how impactful habits are for our health journey!" Jacquole shares. As the impact grew, so did their collective progress. It was a beautiful reminder of the transformative power of habits on the health journey.

Grateful for the gift she discovered, Jacquole embraced her role in helping others achieve not only a healthy body but also a healthy mind and healthy finances**. "I'm thankful for this gift that I'm able to share and help others achieve a healthy body and healthy mind," she expresses with gratitude.
