Whether you are celebrating with your mother, or with your immediate family or friends, here are some ideas to ensure you stay on Plan while enjoying your special day.

  • Have a Lean & Green lunch or dinner. The key to a great day is a healthy and nutritious lunch or dinner. Check out the OPTAVIA Pinterest page for tons of delicious Lean & Green recipe options.
  • Host a lawn-game. Spring is here – it’s time to take advantage of the nice weather by getting outside for a game of croquet, corn hole, outdoor Jenga, or horseshoes. Split into teams and drum up some friendly rivalry while soaking up rays with a backyard challenge. Make it a yearly tradition and pass around a trophy to the winner each year.
  • Take a flower arranging class. Mother's Day arrives just as spring is in full bloom. Take advantage of the season by going to a flower arranging class with Mom or surprising her by sending a fresh bouquet.
  • Set up a scavenger hunt. Get the kids involved to make mom feel extra loved. Split the family into teams to complete tasks like, "take a video of yourself saying how you like to spend time with mom” or, "find a flower outside and present it to your mother."

Yield: 4 servings

Complete Lean & Green Meal: 1 lean, 3 green, 3 condiments

Total Time: 20 minutes

Ingredients

3¾ lb. extra-firm tofu, drained

2 tbsp taco seasoning or chili powder

4 cups chopped leafy lettuce

3 cups cauliflower rice, cooked

1 cup diced tomatoes

1 cup chopped fresh cilantro

Directions

  1. Using your fingers, crumble the tofu to resemble ground meat.
  2. Toss the tofu with the taco seasoning or chili powder.
  3. Heat a nonstick skillet on medium heat and brown the tofu crumbles.
  4. For each serving, place 1 cup of lettuce, ¾ cup of cooked cauliflower rice, ¼ cup of tomatoes, ¼ cup of cilantro, and 15 ounces of tofu crumbles.

Nutrition Facts:  Per serving: 310 calories, 10g fat, 20g carbohydrate, 34g protein

Aloha OPTAVIA

Rosaleen has been overweight most of her adult life, gaining and losing weight depending on her extracurricular activities she's participated in her hometown of Oahu, Hawaii.
