Thanksgiving is a time to reflect on the things that matter most, and for us, your health and well-being top that list. Yield: 4 servings

Per Serving: 1 Leanest, 3 Green, 3 Condiments, 2 Healthy Fats

Total Time: 45 minutes

Ingredients

1¾ lb. cooked sliced turkey breast

3 cups reduced-sodium turkey or chicken broth, divided

4 spreadable cheese wedges such as Laughing Cow Original Swiss

½ tsp onion powder

½ tsp garlic powder

½ tsp rosemary or sage

2 cups cauliflower florets

½ tsp black pepper

2 cups green beans

2 tbsp butter

4 medium portobello mushroom caps

Cooking spray

¼ cup chopped parsley

Directions

  1. In a large skillet, bring 2 cups turkey broth to a simmer. Season with onion powder, garlic powder and rosemary. Simmer on low for 10 minutes or until reduced to 1 cup. Add the cheese wedges and stir until melted and smooth.
  2. In a medium saucepan, bring the remaining 1 cup turkey broth to a simmer. Add the green beans and simmer for 7 minutes. Remove green beans from broth, toss with 1 tablespoon butter and keep warm.
  3. To the same simmering broth, add the cauliflower florets. Simmer for 5 to 10 minutes until tender. Remove the saucepan from heat. Puree cauliflower with a potato masher or immersion blender to desired consistency. Season with the remaining 1 tablespoon butter and black pepper. Keep warm.
  4. Heat oven to broil. Trim the stems off the portobello caps. Spray with cooking spray and place on a baking sheet, stem side up. Broil for 4 to 5 minutes until mushrooms are tender and browned.
  5. While the mushrooms broil, add the turkey slices to the simmering gravy. Simmer until heated through.
  6. To serve, place a mushroom cap on a plate. Top with 7 ounces of sliced turkey. Serve with ½ cup each of mashed cauliflower and green beans. Spoon ¼ cup gravy over turkey slices and mashed cauliflower. Garnish with 1 tablespoon chopped parsley. Repeat for remaining servings.

Embracing the Impossiblel

In the midst of a bustling life as a busy mom of three, Kelly grappled with the idea of undertaking the seemingly impossible. A myriad of doubts swirled in her mind, each one a heavy anchor on her aspirations.

"There's no way this program will work for me," she mumbled to herself, doubting the potential for success.

"I don't have the money or time for something like this," she reasoned, well aware of her many commitments.

"I don't think I have it in me to do this journey," she admitted to herself, struggling to find the strength to embark on a transformative path.

However, the journey commenced, and with each step, Kelly's perspective began to shift. OPTAVIA, which initially appeared beyond her reach, seeped into every facet of her life. Her courage grew, and her faith deepened. A newfound mindset allowed her to believe in her capacity to "do the impossible."

Most importantly, her "why," her children, witnessed firsthand the fruits of her dedication. Through hard work, they learned that effort yields rewards, that grace accompanies the journey, and that together, they could achieve the unattainable. Hope rekindled within her heart, a spark of inspiration that had long been dormant.

In her role as an independent OPTAVIA Coach, Kelly found herself surrounded by a supportive team that had once been strangers but had now become her friends. The program equipped her with lifelong tools for health and well-being, far surpassing mere statistics. She extended a hand to others, sharing the gift of health and hope, even if the numbers didn't always reflect her reach.
