Yield: 4 servings

Per Serving: 1 leaner, 1 healthy fat, 3 green, 3 condiments

Total Time: 3 hours

Ingredients

1¾ lbs. pork tenderloin

1 tsp salt, divided

6 tbsp sugar-free barbecue sauce

1½ tbsp yellow mustard, divided

¼ cup water

4 tsp extra virgin olive oil

¼ cup cider vinegar

½ tsp caraway seeds

6 cups chopped cabbage

Directions

  1. Whisk together the barbecue sauce, one tablespoon of mustard, and a ½ teaspoon salt.
  2. Rub barbecue mixture over pork, and place pork in a slow cooker.
  3. Pour water over top and cook on low for 7 hours until very tender.
  4. Remove pork from slow cooker, reserving liquid for later use, and shred using two forks.
  5. While the pork is resting, pour the reserved barbecue liquid into a large saucepan. Stir in the extra virgin olive oil, ½ tablespoon mustard, vinegar, ½ teaspoon salt, and caraway seeds. Bring to a boil.
  6. Add the chopped cabbage, and simmer gently until just wilted, about 3 to 4 minutes.
  7. Divide the cabbage slaw into 4 equal-sized portions and serve each with 6 ounces shredded pork.

Choosing Life

In 1996, Martha faced a daunting diagnosis – Breast Cancer, a seemingly inherited curse in her family. Every woman in her immediate family had grappled with it, and they were all carriers of the BRCA1 gene. Determined to break this generational cycle, Martha vowed the curse would end with her. However, destiny had other plans, and in 1996, she received her own diagnosis.

Six months of chemotherapy and five years of Tamoxifen followed, as well as significant weight gain. Concerned doctors urged her to prioritize her wellness. This prompted years of relentless efforts to shed the pounds. It wasn't until 2018, through a friend's transformation post on Facebook, when Martha discovered OPTAVIA, and her life took a transformative turn. Now, she stands 67 pounds lighter*, not just in body but also in mind and spirit.

For Martha, OPTAVIA meant more than weight loss; it brought about changes she didn't realize she needed. The ripple effect reached her daughter, son, and husband, leading each of them into their own health journeys. Unhealthy habits were replaced with wise food choices, and snacks no longer constituted a food group.

Motivated by her own transformation, Martha became an independent OPTAVIA Coach. What started as a desire to help a friend evolved into a mission to assist others in their journey to healthier lives. Through her actions, she aims to demonstrate that sustainable, lifelong changes are possible.

What makes this journey truly special for Martha is that she is not alone. With a Coach and a supportive Community, she found encouragement on both good and challenging days. Her fellow Coaches and Clients are more than just companions; they are family. Together, they inspire, learn, and grow, making each of them better versions of themselves.

Reflecting on this life-altering decision, Martha is grateful for stumbling upon her friend's transformation post on Facebook. It was a divine intervention that steered her toward OPTAVIA. This journey was a choice between choosing a healthier life and accepting defeat, and Martha is immensely thankful that she chose life.
