October marks Breast Cancer Awareness Month, an annual initiative aimed at raising awareness on the impact of breast cancer. Since 1985, people, businesses and various communities have joined forces every October to express their solidarity with those affected by breast cancer. This month provides an opportunity for reflection, philanthropy and perseverance.

The heightened education brought about by breast cancer awareness initiatives have yielded positive outcomes. I'd like to share some ways the OPTAVIA Community can continue to raise awareness and prioritize health:

  • Stay active! Find and participate in a breast cancer awareness walk in your vicinity. It's an excellent way to get into motion while supporting a vital cause. If you're not ready for exercise, attending the walk as a supporter is equally meaningful. Find a local race or walk in your community.
  • Make a difference by contributing. You can honor survivors and loved ones or assist those currently battling breast cancer through donations. Explore the Breast Cancer Charities of America (BCCA) for a range of ways to help women and men facing this challenge.
  • Embrace a healthy lifestyle. As discussed in Your LifeBook, maintaining a healthy weight, consuming nutritious foods, adopting healthy habits and engaging in regular exercise all play a significant role in your overall health.

Let's motivate and inspire one another. Together, let's spread this message and work towards positive change!

October is also Global Diversity Awareness Month. This is an excellent opportunity to reflect on the incredible richness that diversity brings to our world and how it can positively impact our health and wellbeing.

Global Diversity Awareness Month invites us to celebrate the beauty of our global diversity within our OPTAVIA Community, where people from different backgrounds, cultures and perspectives come together to create a tapestry of transformative experiences and knowledge. It's also a reminder that diversity plays a crucial role in shaping our health, our habits and our lifestyle choices.

Here are a few ways we can make this month meaningful and health-focused:

  • Cultural Exploration: Take this opportunity to explore diverse cuisines and traditions from around the world. Try new Lean & Green recipes that incorporate different ingredients and experience the flavors of different cultures while making mindful choices for your health and wellbeing.
  • Mindful Practices: Practice mindfulness inspired by various cultures. Explore meditation techniques, yoga or relaxation methods from different parts of the world to enhance your mental and emotional health.
  • Health Equity: Research and learn about the unique health needs and disparities faced by diverse communities worldwide. By understanding these challenges, we can advocate for improved health equity and access for all, while supporting the diversity within our OPTAVIA Community.
  • Community Connection: Connect with organizations and initiatives that promote global diversity and inclusion. Participate in events that celebrate the rich tapestry of humanity and contribute to a more inclusive world.

Remember that our health is deeply intertwined with the diverse global community we are all part of. By celebrating diversity and fostering unity, we can create a more inclusive and healthier world for everyone.

Yield: 2 servings

Per Serving: 1 Lean, 3 Green, 3 Condiments

Total Time: 60 minutes

Ingredients

1 lb. 14 oz. Mori-nu extra firm tofu, cut into 8 slices

1 tbsp low sodium soy sauce

¼ tsp garlic powder

¼ tsp ground ginger

3 tbsp almond flour

Caramelized Vegetables

1 cup broccoli florets

1 cup cauliflower florets

½ cup radishes, cut in quarters

2 scallions, cut into 1-inch pieces

¼ tsp kosher salt

Directions

  1. Place 4 paper towels on a plate.
  2. Set the tofu slices on top of the plate and cover with more paper towels.
  3. Place a cast iron pan or something else that is heavy on top.
  4. Let sit for 30 minutes.
  5. Remove drained tofu from the paper towels and cut into 1"x1" sized cubes.
  6. In a large bowl mix together the soy sauce, garlic powder and ginger.
  7. Add the tofu and toss to coat well.
  8. Add the almond flour and toss to evenly coat the tofu.
  9. Place the tofu in a single layer on one side of a large parchment lined baking sheet.
  10. Add the broccoli, cauliflower, radishes and scallions to the other side of the baking sheet.
  11. Sprinkle the vegetables with the salt.
  12. Place the tofu and vegetables in a 400°F preheated oven and bake for 20 to 25 minutes, tossing the tofu and vegetables halfway.
  13. Increase the oven to broil and broil the tofu and vegetables until they are browned and caramelized, about 3 to 5 minutes.

The Ripple Effect of Transformation
