Per Serving: 1 Leaner, 1 Healthy Fat, 3 Green, 3 Condiments
Total Time: 45 minutes

Ingredients
2, (8-oz.) boneless skinless chicken breasts
½ tsp salt, divided
¼ tsp ground black pepper
2 tsp olive oil
½ cup minced scallions
4 cups chopped collard greens
1 tsp smoked paprika
½ cup fresh diced tomatoes

Directions
- Season the chicken breast with the ground black pepper and half of the salt.
- Preheat a skillet, add the olive oil and sear the chicken breasts until they are golden brown on both sides.
- Once the chicken breasts are well-browned, remove them from the skillet and set aside.
- Into the same skillet, add the scallions, collard greens, remaining salt, smoked paprika and 1 cup of water.
- Cover with a lid and simmer gently for 5 minutes.
- Once the greens are tender, add the diced tomatoes and continue to simmer for 2 minutes without a lid.
- Add the seared chicken breasts back to the skillet, cover with a lid and simmer for 10 minutes until the chicken breasts reach an internal temperature of 165°F.
- Divide the greens and pan juice evenly among two plates and top each with a chicken breast.

From Weight to Wonder
Bryanna and her husband first met while working in the same department at a University in San Luis Obispo. She fell in love with him for the kind, caring soul within, rather than the outward appearance of a nearly 380 pound man. Despite stereotypes associated with the Athletic Department, her husband defied expectations. Early in their marriage, they faced fertility challenges, leading them on a lengthy and arduous journey through heartbreak and failed attempts. The couple's perseverance ultimately rewarded them with a daughter in 2010 and twin boys in 2012.
However, the birth of the twins brought its own set of challenges, particularly with one facing major respiratory issues. Years of stress, hospital stays, and emotional turmoil took a toll on Bryanna, causing her to enter survival mode that resulted in weight gain. It wasn't until November 2020, prompted by her daughter's innocent observation of feeling "fat," that Bryanna decided enough was enough. She took charge, seeking inspiration from her cousin who was an independent OPTAVIA Coach, and eventually embracing the transformative power of OPTAVIA.
OPTAVIA became the catalyst for a remarkable change in Bryanna and her husband's lives, allowing them to emerge as their best selves and instilling in them the confidence to follow a path to optimal health. The transformation extended beyond physical changes, influencing their ability to partake in everyday activities and savor unnoticed victories, like comfortably riding a water slide or boarding an airplane without a seat belt extender.
Motivated by this profound transformation, Bryanna became an independent OPTAVIA Coach in February 2021. Initially, her goal was to support their nutritional needs, but it evolved into something much more significant. This decision ignited a newfound purpose within her, compelling her to help others on their wellness journeys. Bryanna recognizes that true well-being goes beyond the scale and encompasses overall health.
In her quest to continue to make a difference, Bryanna encourages others to shed not just weight, but unhealthy habits, emphasizing that one's identity is not the issue; it's the habits that can be changed.
